Based on their preserved lemon beer this botanical mix, including lemongrass, lemon verbena and lemon peel, is steeped in British wheat-based spirit before being diluted to 40% with filtered water and a mix of caper brine, citric acid, sugar and salt. Wild Beer Shnoodlepip gin and Double Dutch Spices and Oakwood tonic

Based on Wild Beer’s Shnoodlepip beer – a red wine barrel-aged Saison brewed with pink peppercorns, hibiscus, and passion fruit – Bristol’s Psychopomp micro distillery have deconstructed the flavours then built them back up to create a glorious gin. Paired with Double Dutch Spices & Oakwood tonic to emphasise the woody and spiced flavours; dried hibiscus and lemon peel garnish. £7.50

Shipshape gin and Fentiman’s Pink Grapefruit tonic

A new gin, hand-crafted in Long Ashton and made using 12 botanicals, including Somerset raspberries, grapefruit peel, fennel, wild honey from Flax Bourton and rosemary from the distiller’s garden. Delightful when served with pink grapefruit tonic and garnished with a slice of pink grapefruit and a handful of juniper berries. £7

All the joy of a gin and tonic but without the alcohol this non-alcoholic spirit from Bristol was inspired by the fun-loving vibes of Colombia.
